Yes Dear Readers Fruitcake Has A History by Kevin Dayhoff

Yes, Dear Readers, Fruitcake Has A History

December 26, 2012 Kevin E. Dayhoff http://www.thetentacle.com/ShowArticle.cfm?mydocid=5537

The holidays are upon us and I can only be sure that many thoughts have turned to getting together with family and friends – and of course, the wonders of fruitcake.

Yes, fruitcake. Yeah! I know it is a rather heavy subject for the Christmas season, but fools rush in where angels fear to tread. I’ve been called many things over the years, but “Angel” is not one of them, so here goes.

Seems nothing stirs the passions of many like the subject of food. I’m still nursing the bruising I took several years ago when I commented on the virtues of squash: “As much as I like vegetables, one food that does not exist on the Dayhoff's Nutrition Pyramid (DNP) is squash. God created the squash as a joke. The word "squash" is Native-American for "mud disguised as plant."

Moving along; your intrepid writer here has observed that first among equals on the holiday food passion meter seems to be the topic of fruitcake. After all, nothing warms the cockles of one’s heart like fruitcake on a cold Central Maryland night. I have been told that fruitcake burns – forever – in the fireplace at a rather high temperature; and it adds a brilliant display of holiday colors to the flames.

The subject of fruitcake arrived when I was recently asked as to what was my favorite food during the holidays. To which I answered, “Yes!!!”

Fruitcake has gotten a bad rap over the years. That’s probably because people haven’t had homemade dark fruitcake with icing – a Southern tradition.

According to various learned commentaries on the virtues of fruitcake, the concoction of chopped candied fruit, nuts, and spices – and plenty of alcohol – was quite popular at Victorian teas in 19th century England, where many know it as “Christmas Cake.”

Another variation of fruitcake – or “fruit bread,” …http://www.thetentacle.com/ShowArticle.cfm?mydocid=5537

Flinging Fruitcake

What to Do with Leftover Fruitcake by Pam Grout December 13, 2011 Holiday desserts sail over Manitou Springs, Colo. http://americanprofile.com/articles/fruitcake-toss-manitou-springs-colorado/

Wearing military-style fatigues and an aviator cap, Jerry Pokorny, 64, stuffs a frozen fruitcake into a long, slim tube attached to an exercise bike. He checks printed satellite maps, twists the valve on a 10-gallon tank of compressed air and–kaboom!–the fruitcake sails across the high school football field in Manitou Springs, Colo. (pop. 4,992), past the goalposts and into the distance toward Pikes Peak.

Calling himself "a retired engineer with too much time on his hands," Pokorny built his wacky "Fruitcake of Mass Destruction" out of parts from a junkyard to join 75 contestants in the 2011 Manitou Springs Great Fruitcake Toss. The annual event celebrates the world's most reviled and underappreciated holiday dessert by challenging contestants to toss, hurl and fling fruitcakes through the air, occasionally obliterating the sugary artillery in the process…http://americanprofile.com/articles/fruitcake-toss-manitou-springs-colorado/

Chick-fil-A will be celebrating Back to School day on August 18, 2012.

Tuesday, August 14, 2012, Westminster MD - We stopped over at the Chick-fil-A in the Westminster Shopping Center at the corner of Englar Road and Rte 140 in Westminster, MD for dinner Tuesday evening.

Along with our food came a little flyer saying that the local Chick-fil-A will be celebrating Back to School day on August 18, 2012.

I also attached a flyer that we got last December. The Chick-fil-A Trays flyer was discussed at great length at several public safety non-profits, of which I belong.

I know that many of us go out of our way to patronize the local Chick-fil-A, because the restaurant is so supportive of our local community…

Chick-fil-A has excellent food; runs a great restaurant, has excellent customer service, and is very supportive of local firefighters and law enforcement, non-profits and the community.

By all measures, Chick-fil-A is reported to be a good employer, and is a valuable contributor to the local community.

Chick-fil-A, chicken, food, restaurants, Westminster, Maryland, firefighters, law enforcement, public safety, catering,

Hopefully you and your family will join former Arkansas Gov. Mike Huckabee today and be sure to patronize your local Chick fil-A restaurant in honor of ‘Chick-fil-A Appreciation Day.’ http://www.thetentacle.com/ShowArticle.cfm?mydocid=5261

Governor Huckabee organized the event in the wake of the un-American, intolerant, hate campaign being waged against the Atlanta-based restaurant chain after its president, Dan Cathy, told the author of the “Biblical Recorder,” a journal of the Baptist Press, his personal views on gay marriage.

In an article, “‘Guilty as charged,’ Mr. Cathy says of Chick-fil-A's stand on biblical & family values,” writer K. Allan Blume, explains, “Dan Cathy oversees one of the country's most successful businesses.

“As president and chief operating officer of Chick-fil-A, Cathy leads a business with 1,608 restaurants that had sales of more than $4 billion dollars last year…

“His father, S. Truett Cathy started the business in 1946… In 1967, his father opened the first Chick-fil-A restaurant in Atlanta…

In an excellent article on the matter by Jamie Smith Hopkins, “Chick-fil-A president's words on gay marriage spark tempest,” penned for The Baltimore Sun, Ms. Hopkins reports that Mr. Cathy said that Chick-fil-A is “very much supportive of the family — the biblical definition of the family unit.”… http://www.thetentacle.com/ShowArticle.cfm?mydocid=5261

Consumer perception and sensory effect of oxidation in savory-flavored yogurt enriched with n-3 lipids

Consumer perception and sensory effect of oxidation in savory-flavored yogurt enriched with n-3 lipids

Journal of Dairy Science Volume 95, Issue 4 , Pages 1690-1698, April 2012

Department of Food Science and Technology, Virginia Tech, Blacksburg 24061
Received 1 October 2011; accepted 22 November 2011.

Abstract

The objective of this study was to determine the effects of different oils (butter, fish, and oxidized fish) on sensory characteristics of a savory [chile-lime (CL)] low-fat yogurt using descriptive (unstructured line scales, 5 attributes) and affective (hedonic) sensory testing methods.

Yogurts were each manufactured at low [1.1–1.2% total fat; 0.43% added oil (wt/wt)] or high [1.6% total fat; 1% added oil (wt/wt)] levels of fish oil, with high levels of fish oil targeted to deliver 145mg of docosahexaenoic acid+eicosapentaenoic acid/170g of yogurt.

In a preliminary study, untrained panelists (n=31), using triangle tests, did not discriminate between low levels of fish and butter oils in unflavored yogurts but could discern yogurt with oxidized fish oil, even at the low level.

Trained panelists (n=12) described lower lime and acid flavor characteristics in CL-flavored yogurts containing 1% oxidized fish oil compared with yogurts containing low levels of oxidized fish oil and low or high levels of butter and fish oils. Oxidized flavor was higher in CL-flavored yogurts with oxidized fish oil (low and high) and with the high level of fish oil.

Consumer ratings (n=100; 9-point hedonic scale; 9=“like extremely) of overall acceptability and flavor acceptability were bimodally distributed, with overall means between 4 and 5 (“neither like nor dislike”) for CL-flavored yogurt with butter or fish oils (high level).

The upper 50% of responses for yogurt with butter or fish oil were 6.51 and 6.31, respectively, for overall acceptability (“like slightly”), and 7.02 and 6.56, respectively, for flavor acceptability.

A large segment of consumers may be interested in incorporating heart-healthy n-3 lipids in their diets through frequent consumption of a savory yogurt enriched with n-3 fatty acids… http://www.journalofdairyscience.org/article/S0022-0302(12)00134-8/abstract?elsca1=etoc&elsca2!=email&elsca3=0022-0302_201204_95_4&elsca4=nutrition_dietetics

Kevin Dayhoff - The Tentacle: A Little Turkey History and A Wish

A Little Turkey History and A Wish
Kevin E. Dayhoff
http://www.thetentacle.com/ShowArticle.cfm?mydocid=4760
Happy Thanksgiving! Tomorrow all of America will be celebrating the American version of the “Harvest Festival” by gathering their families together and watching football. Some may be aware that the annual holiday originated as a celebration to give thanks for the annual harvest.

Perhaps because of my family’s long agricultural history, Thanksgiving has always been a special holiday in Carroll County. Besides, I’m a fan of any holiday in which food is involved, especially turkey.

I stand in good company because the turkey is a uniquely American contribution to the global palette.

According to numerous sources, including Andrew F. Smith’s “The Turkey: An American Story,” “The Spanish encountered domesticated turkeys in Mexico by 1518, and within a few years they had been introduced into the West Indies and Spain. Shortly thereafter, turkeys were widely disseminated throughout Western Europe.”

Dinner at Harry’s Main Street Grille in Westminster Maryland

Dinner at Harry’s Main Street Grille in Westminster Maryland

My family had dinner at Harry’s this evening.  In addition to the delicious traditional food we have come to love and enjoy, the venerable Main Street Westminster restaurant has added some great new items on, literally, a new menu.  I had the new veggie sandwich, which was delightful.  And we got to visit with a number of friends and neighbors.

Check Harry’s out next time you anywhere near Westminster.  The servers are fun and friendly – and from the local community.  It is locally owned; and for three generations, the Sirinakis family has supported the community – especially art and cultural events.

The prices are quite reasonable and all the money you spend at Harry’s stays in Carroll County; supports local workers, and the local community.

Founded in 1946, Harry's Main Street Grille has become a dining landmark in downtown Westminster. Now in its third generation of ownership by the Sirinakis family, Harry's offers a great selection of American cuisine including burgers, paninis, wraps and pastas.

Their famous hot dogs are served Coney Island style with chili, mustard and onions, but definitely not sauerkraut!

Customers who absolutely must insist on having sauerkraut on their hot dogs will have to pay $85 for it in accordance with Harry's longstanding policy... More: http://westminster.patch.com/listings/harrys-main-street-grille
