The holidays are upon us and I can only be sure that many thoughts have turned to getting together with family and friends – and of course, the wonders of fruitcake.

Yes, fruitcake. Yeah! I know it is a rather heavy subject for the Christmas season, but fools rush in where angels fear to tread. I’ve been called many things over the years, but “Angel” is not one of them, so here goes.

Seems nothing stirs the passions of many like the subject of food. I’m still nursing the bruising I took several years ago when I commented on the virtues of squash: “As much as I like vegetables, one food that does not exist on the Dayhoff's Nutrition Pyramid (DNP) is squash. God created the squash as a joke. The word "squash" is Native-American for "mud disguised as plant."

Moving along; your intrepid writer here has observed that first among equals on the holiday food passion meter seems to be the topic of fruitcake. After all, nothing warms the cockles of one’s heart like fruitcake on a cold Central Maryland night. I have been told that fruitcake burns – forever – in the fireplace at a rather high temperature; and it adds a brilliant display of holiday colors to the flames.

The subject of fruitcake arrived when I was recently asked as to what was my favorite food during the holidays. To which I answered, “Yes!!!”

Fruitcake has gotten a bad rap over the years. That’s probably because people haven’t had homemade dark fruitcake with icing – a Southern tradition.

According to various learned commentaries on the virtues of fruitcake, the concoction of chopped candied fruit, nuts, and spices – and plenty of alcohol – was quite popular at Victorian teas in 19th century England, where many know it as “Christmas Cake.”

For everyone at the holiday party that enjoyed the marinated vegetable salad that I brought; here is the recipe:

Marinated Vegetable Salad

From: Evelyn Babylon

Serving Size: 24

Preparation Time: 0:24

Categories: Salads Side Dishes

Amount, Measure, Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 Can - 14 Oz Laseur Peas – Drained

1 Can French Style Green Beans – Drained

1 Can Shoepeg Corn – Drained

1 Cup Green Pepper -- Finely Chopped

1 Cup Celery -- Finely Chopped

1 Cup Onion -- Finely Chopped

1 Small Jar Pimiento -- Not Drained

1/2 Cup Salad Oil -- Not Olive Oil

1/2 Cup White Vinegar

3/4 Cup Sugar

Mix all ingredients together in a 3-quart bowl.

Marinate in refrigerator overnight or 24 hours.

Serve chilled

Tuesday, August 14, 2012, Westminster MD - We stopped over at the Chick-fil-A in the Westminster Shopping Center at the corner of Englar Road and Rte 140 in Westminster, MD for dinner Tuesday evening.

Along with our food came a little flyer saying that the local Chick-fil-A will be celebrating Back to School day on August 18, 2012.

I also attached a flyer that we got last December. The Chick-fil-A Trays flyer was discussed at great length at several public safety non-profits, of which I belong.

I know that many of us go out of our way to patronize the local Chick-fil-A, because the restaurant is so supportive of our local community…

Chick-fil-A has excellent food; runs a great restaurant, has excellent customer service, and is very supportive of local firefighters and law enforcement, non-profits and the community.

By all measures, Chick-fil-A is reported to be a good employer, and is a valuable contributor to the local community.

Abstract

The objective of this study was to determine the effects of different oils (butter, fish, and oxidized fish) on sensory characteristics of a savory [chile-lime (CL)] low-fat yogurt using descriptive (unstructured line scales, 5 attributes) and affective (hedonic) sensory testing methods.

Yogurts were each manufactured at low [1.1–1.2% total fat; 0.43% added oil (wt/wt)] or high [1.6% total fat; 1% added oil (wt/wt)] levels of fish oil, with high levels of fish oil targeted to deliver 145

mg of docosahexaenoic acid

eicosapentaenoic acid/170

g of yogurt.

In a preliminary study, untrained panelists (n

31), using triangle tests, did not discriminate between low levels of fish and butter oils in unflavored yogurts but could discern yogurt with oxidized fish oil, even at the low level.

Trained panelists (n

12) described lower lime and acid flavor characteristics in CL-flavored yogurts containing 1% oxidized fish oil compared with yogurts containing low levels of oxidized fish oil and low or high levels of butter and fish oils. Oxidized flavor was higher in CL-flavored yogurts with oxidized fish oil (low and high) and with the high level of fish oil.

Happy Thanksgiving! Tomorrow all of America will be celebrating the American version of the “Harvest Festival” by gathering their families together and watching football. Some may be aware that the annual holiday originated as a celebration to give thanks for the annual harvest.

Perhaps because of my family’s long agricultural history, Thanksgiving has always been a special holiday in Carroll County. Besides, I’m a fan of any holiday in which food is involved, especially turkey.

I stand in good company because the turkey is a uniquely American contribution to the global palette.

According to numerous sources, including Andrew F. Smith’s “The Turkey: An American Story,” “The Spanish encountered domesticated turkeys in Mexico by 1518, and within a few years they had been introduced into the West Indies and Spain. Shortly thereafter, turkeys were widely disseminated throughout Western Europe.”

Dinner at Harry’s Main Street Grille in Westminster Maryland

My family had dinner at Harry’s this evening. In addition to the delicious traditional food we have come to love and enjoy, the venerable Main Street Westminster restaurant has added some great new items on, literally, a new menu. I had the new veggie sandwich, which was delightful. And we got to visit with a number of friends and neighbors.

Check Harry’s out next time you anywhere near Westminster. The servers are fun and friendly – and from the local community. It is locally owned; and for three generations, the Sirinakis family has supported the community – especially art and cultural events.

The prices are quite reasonable and all the money you spend at Harry’s stays in Carroll County; supports local workers, and the local community.
